Chocolate Avocado Mousse
This is a sneaky way to turn produce into a nutritious treat. The high monounsaturated fat content of the avocados are an excellent vehicle for the chocolatey goodness of the cacao powder.
1. Puree avocados in a food processor until smooth.
2. Add cacao powder and process until fully incorporated.
3. Add ½ c coconut milk, maple syrup, vanilla, and sea salt and puree. If too thick, add in more coconut milk.
4. Portion in serving cups and garnish with toasted coconut.
