Peanut Butter Zucchini Quick Bread
This is an excellent way to enjoy baked goods while still getting a dose of vegetables. This quick bread is a gluten free, flour-free recipe but is so moist and delicious that it can be enjoyed by everyone from those with celiac disease to wheat-philes.
Note: The bread will keep for 2-3 days at room temperature in a sealed container. If you are not able to consume it within this time frame it freezes beautifully.
Yields: 1 loaf
