Pretty in Pink Sauerkraut
I love sauerkraut and eat it nearly everyday for breakfast. The pink peppercorns in the recipe lend a bit of piquancy along with a surprising touch of sweetness. This is also a stealthy way to incorporate more sea vegetables into your daily diet.
Note: Sometimes, especially in the beginning, you may need to press down the weights so that the buildup of gas can be released.
The temperature of the place you store the sauerkraut can have a big impact on how long the fermentation process goes. I typically store mine in a basement so my sauerkraut takes anywhere from 6-8 weeks.
