Don’t get us wrong: we love a sweet. But we just don’t love sweets that are only sweet. We want complexity and contrast in baked goods for the same reason we want them in savory dishes: they’re just more fun to eat!

Guest teacher Marie Brennan agrees with us—and she’s come up with ways to bring balance and intrigue to baked goods that we never would have dreamed of. In this livestream class with Marie, we’re exploring the savory side of sweets by playing with salt and umami in ways that make you want to take just one more bite.

We’ll look at why salt is your dessert’s best friend (beyond just a sprinkle on top), how umami-rich ingredients like miso, Parmesan, tamari, and gochujang can bring unexpected depth, and how to balance those savory notes so the final result still reads as dessert—not an experiment that dessert purists will scoff at. Along the way, we’ll talk about flavor layering techniques borrowed from savory cooking and how to build desserts that feel grown-up without requiring a pastry school diploma.
